Previously, the macOS `CCompilerConfig` for native assets was created via running `xcrun clang --version`, but this is not always reliable (i.e., when running under Nix on macOS). Thus, this commit introduces a new mechanism to find the CCompilerConfig binaries using `xcrun --find`, which is a more standard way of finding development-related binaries on macOS (and is also properly supported in Nix's `xcrun` wrapper).
